Carrot-Tomato-Peanut Salad
















Ingredients -
Carrots - 3 medium ( grated)
Tomato - 2 large - diced finely
Groundnut/Peanuts - 30 gms ( 2 tbsp)
Lime juice - 1 tsp
Pepper powder - 1/2 tsp
Salt to taste
Oil - 1/2 tsp
Mustard seeds - 1/2 tsp
Curry leaves - few

Roast peanuts well and grind to coarse powder.
In a bowl mix the grated carrot, diced tomato and the peanut powder.
Add the lime juice. Mix
Add the salt, pepper powder.
Season with mustard and curry leaves.
Chill and serve.
