Ingredients -
Carrots - 3 medium ( grated)
Tomato - 2 large - diced finely
Groundnut/Peanuts - 30 gms ( 2 tbsp)
Lime juice - 1 tsp
Pepper powder - 1/2 tsp
Salt to taste
Oil - 1/2 tsp
Mustard seeds - 1/2 tsp
Curry leaves - few
Roast peanuts well and grind to coarse powder.
In a bowl mix the grated carrot, diced tomato and the peanut powder.
Add the lime juice. Mix
Add the salt, pepper powder.
Season with mustard and curry leaves.
Chill and serve.
Oh my goodness...this is filled with flavour...I can tell from the ingredients.... Hey, I have a potluck dinner to attend this week and this would be such a 'hit'!!
