Dal with Gourd
This was made with Snake Gourd ( a tropical/subtropical vine) . It can be substituted by most vegetables. Normally, this is made with grated coconut, but since it was not available, the man, improvised the recipe and the result was great. I have recorded it for future use
Ingredients:
Snake Gourd - 200 gms
Tomatoes - 2 large
Tuvar Dal ( Red gram dal) - 50 gms
Moong Dal ( Green gram dal) - 25 gms
Turmeric powder - 1/2 tsp
Salt to taste.
Curry leaves - few
Oil - 1 tbsp
Mustard seeds - 1 tsp
Roast and grind to coarse powder:
Channa dal - chick pea - 2 tbsp
Dhania or coriander seeds - 2 tbsp
Red chili - 5-6
Pepper corns - 4-5
Jeera ( cumin) - 1 tsp
Pressure cook the tuvar and moong dal till soft.
Take oil in a wok, add the mustard, allow to splutter add curry leaves.
Add the diced tomatoes and saute
Add the cut snake gourd,turmeric powder and allow to cook .
When the vegetable turns slightly tender, add the coarsely ground powder
Add salt to taste.
Allow to simmer and remove from heat.
