Vermicelli Idli

Recipe courtesy - my sister-in-law. A great cook.

1 cup vermicelli( bambino broken).
1/2 cup sooji
1 cup curd.
1tbsp cooking soda
3 tbsp oil.
salt to taste
1 1/2 cup water.
3 tbsp broken cashewnuts.
Coriander leaves ( optional)

Fry vermicelli in little oil till it is light brown.
Add sooji to it and fry for a minute.
When cool add curd and salt, cashewnuts, 1 tbsp of soda, and mix well.
Now add water little by little till you get idli consistency.
Keep it aside for half an hour and then make the idlis.
serve them hot with chutney or sambar.
