Stuffed Capsicum

This can be made with any left over (dry) potato/mixed veg curry.

Capsicum-Bell peppers - ( nicely shaped so that it can be stuffed well)
Boiled potato / potato flakes
Onions
Tomato purée
Peas
Corn
Carrot - finely diced
Dhania powder
Chillie powder
Ginger garlic paste
Garam masala powder
Grated paneer / cheese


Take a little oil, sauté the onions,ginger-garlic paste, add the vegetables ( peas, corn, carrot). Cook till done - add the boiled potato or flakes,the tomato puree, salt, other condiments and make a dry curry.

Cut the capsicum carefully around the top, alternatively cut just under the stalk. Scoop out the insides till just a hollow case remains.

Put in the curry and top it with grated paneer or the cheese. For even better taste, if you are using paneer add to the curry mix also.

Brush the capsicum with a little fat. And place in microwave / oven till it changes colour and the skin gets slightly puckered.

Non vegetarians - can use mince meat with peas and paneer. Vegetarians can use soya granules too.
