Tomato Onion Uthappam




Of late I have been browsing cookery blogs ( oh! what is the matter with me??). And looked at this recipe of Uthappam. I know of someone who only orders Uthappam every time we go out :-) - the inspiration of this blog - and I thought I should try it out. Earlier efforts were not successful, this one was. Check it out.

Ingredients:
Rice - 1 cup
Urad Dhal - 1/2 cup
Poha - 1/4 cup
Cooked rice - 1/4 cup
Chopped onion, tomatoes
Corriander - finely chopped
Green chillies finely chopped
Salt to taste.

Soak the rice and dhal together for atleast 4-6 hours
Grind fine with poha and cooked rice. Do not add too much water while grinding. Uthappam's are slightly thicker than the ordinary dosa.
Allow to ferment overnight.
Next day mix batter well. Add salt.
Heat the tava. Smear a little oil.
Spread the dosa a little thick.
Place the onion, tomato and corriander pieces evenly over the dosa.
Cover and keep for a while.
Some do not turn the dosa. In that case keep it a little longer to ensure that the upper side is cooked.
I turned it over and kept it briefly.
Serve with chutney or whatever accompaniments you may desire.

The Uthappam just melted in the mouth!!

  2. Poha is parboiled beaten rice check this site en.wikipedia.org/wiki/Beaten_rice
    or google search the word. Yes, this is a simple recipe and tastes good too
