Spinach and Cottage Cheese Calzone

Who would ever have thought I would get into the kitchen to get my mind off a few matters ?  But of late, I get engrossed in experimental cooking and quite enjoy it too.  Ever since I had the Calzone, I have been wanting to try it out.  An Indianised version of it.  So instead of the ricotta I added paneer, and threw in a bit of Italian Pizza seasonning ( did I say an Indianised version ? ) and the result was quite nice.  I probably will make smaller ones like our samosa size.  Easier to eat as a snack.  The large ones are fine for a meal.

Ingredients: - This can make about 6 medium size Calzones
All purpose flour - 2 1/2 cups
Warm water - 1 cup
Dry yeast - 7 gms ( 1 pkt)
Sugar - 1 tsp
Salt - 1/2 tsp
Oil - about 1-2 teaspoons including what is required to oil the bowl

Beaten egg/milk/oil - to brush the calzone for that golden colour !

Filling -
Spinach - 2 bunches
Onion - 1
Cottage Cheese / Paneer - 150 gms
Garlic - few pods
Oil - 1 tsp
Salt and Pepper to taste
Italian seasonning - to taste
Tomato paste - like the pizza base - missing in my calzone

Take a large bowl.  Add the warm water, sugar and yeast.  Mix
Allow to stand for about 10 minutes till you see it bubbling
Tip in the salt and olive oil and gradually add in the flour.
Combine.
It might be a little sticky.
Put on a well floured surface and knead for about five minutes.
If it requires a little more flour, add it , and knead till no longer sticky and smooth
Coat the dough with oil and use it oil the sides of the bowl too
Keep covered with a towel or cling wrap in a warm place for an hour or so or till it doubles in size.

Meanwhile make the filling
Rinse the spinach.  Do not dry
Heat the oil. Add onion and cook till translucent
Add the garlic and then in a while the spinach.
Cook till tender
Remove and keep in a sieve. Press lightly to remove excess liquid
Add grated paneer
Add salt and pepper.

Preparing the Calzone:
When the dough has risen - begin the next few steps
Punch the dough and knock out the air
Briefly knead and form a ball.  Cut in half and then another half till you get the numbers / pieces
Roll each piece to a circle - large ones are about 6-8" - I made them about 5" I think

Preheat oven to 190 C

If you have the pizza sauce or tomato base, spread it in one half of the circle leaving the edges
Put the spinach filling.
If you wish add grated cheese ( I did not)
Brush the edges with water.  Fold the top half of the circle around the filling.
Tuck and twist or crimp edges with a fork
Pierce top lightly with a fork ( I forgot to do it but it did not matter )

Brush with beaten egg or oil or milk
Place on a baking sheet
Bake for about 20 minutes till golden brown

Cool before eating, but have it preferably a little warm.


( The filling can be anything ... vegetarian, non vegetarian, leftovers.... )
