My nephew got this pack of chocolate chips for me. And I made these muffins for him when he came by for tea. I found so many muffin recipes online, but what made me choose this one from The Chef in You were the comments following the recipe from those who had tried it out. And I knew so many of them could not be wrong. And I was indeed right. This is a good recipe even for a beginner at baking, like myself. Just sweet enough for those with a sweet tooth , and yet, the sweetness does not destroy the taste of the nuts or the slight bitterness of the semi-sweet chocolate chips. It even has a hint of cinnamon in the topping !
Ingredients
( Made 8 medium sized muffins/ 6 large ones )
All purpose flour (Maida )- 1 cup
Unsalted softened butter - 1/4 cup
Sugar - 1/2 cup
Eggs - 1
Yogurt - 1/2 cup
Vanilla - 1/2 tsp
Baking soda - 1/2 tsp
Baking powder - 1/4 tsp
Salt - 1/4 tsp
A little more than half cup of semi sweet chocolate chips
Topping:
Cinnamon powder - 1/2 tsp
Chopped almonds - 2 tbsp ( I used almonds here)
Brown sugar - 1 tbsp ( I used plain sugar)
Semi-sweet chocolate chips - 2-3 tbsp
( Mix the ingredients for the toppings and keep ready)
In a bowl cream softened butter and sugar ( I used a manual egg beater)
Add in the egg and beat well
Followed by the yogurt and vanilla
In another bowl, combine the flour, salt, baking powder and baking soda.
Add this gradually to the egg-butter-yogurt- sugar mixture
Slowly blend it into the mixture. Do not over mix at this stage
Fold in the chocolate chips.
Pre-heat the oven to 180 C
Line a muffin tray with the paper cases
Fill in the case with a spoon till 2/3 full
Then put in the topping on each
Bake for about 20 mins - or till it turns golden brown and toothpick inserted in centre is comes out clean
I think it took less than 20 mins for me.
Cool for a few minutes and remove from the pan. Enjoy.
