Mysore Pak

N turned one today.  This definitely called for a preparation of something sweet.   I found this one at Uma's Kitchen.  And it turned out good.  Just the right amount of ghee and the sweetness was just right.
Happy Birthday little one....


Besan ( chickpea flour ) 1 cup
Sugar - 1 cup
Ghee (clarified butter) 1 cup - soften if solid
Water - 1/4 cup

Roast the chickpea flour till the raw flavour is lost. Over low heat. Do not burn 3-5 minutes
Take off heat and keep aside
Sieve the roasted flour so that there are no lumps
Grease the tray in which you will pour the mysore pak to set
Pour the sugar and water in a pan and heat till you get a one string consistency.
Keep a close watch, this happens quite quickly

Now add a small amount of the ghee and then the flour little by little
Stir vigorously
The more you stir, the fluffier the product
Keep adding the ghee
If possible have a helper with you.  Makes the job easier
As the mixture becomes thicker it will come together, bubble and leave the sides

Pour into the prepared greased tray
It will set soon
Cool a bit, and make the desired shapes when still slightly warm
