Cauliflower Curry

La likes Cauliflower.  And she wanted to have it for dinner today.  I had no potato, no mint, no ginger.... and  as I wondered how to make it, VK got into the act and made a fabulous curry.  It looks a little bland but is packed with flavour.  We loved it.



Ingredients
Cauliflower - 1 medium
Onion – 3 nos – chopped
Tomato – 2 nos
Coriander powder – 1 tbsp

Blend together
Garlic – 8 - 10 ( small pods)
Coriander leaves– 1 large bunch
Green chillies – 3 nos - they were fairly large in size
Cashew nuts – 6-8

Seasoning:
Oil - 2 tbsp
Mustard - 1 tsp
Cumin - 1 tbsp



Cut cauliflower into florets

Blend coriander leaves, garlic pods, green chiles and 2 tbsp of raw diced onion, cashew. 

Take a pan.
Add the oil, the cumin and mustard.
Allow the mustard to splutter
And then the onions , sauté till transparent.
Add the cauliflower florets – add some salt and coriander powder.
Cook on slow flame till semi cooked.
Add the blended paste and some water to get a gravy
Bring to boil and simmer.
Add the chopped tomatoes.
Allow it to turn mushy.
Check for salt.

Had this with capsicum-peas rice.  But it would be great with rotis too.  
A bit of mint in the blended paste would be lovely too.
And garnish would make it more presentable.

  11. His secret ingredient has always been nuts - cashew or almonds!! Cauli looks yummy. Stocking up on my cashewnuts now :)

  13. I love the pale creamy colour of this curry....we make a doi kopi (Cauliflower in Yogurt) which looks somewhat like this! Nice change from the usual curry!

    1. My younger one does not like an overdose of turmeric. And my husband who made this curry decided to skip it. I will look up the doi kopi and make it sometime.
