Spinach Pancakes

This is an eggless version.  And the spinach adds a nice taste to it.  Use the spinach with the stalks too, it adds  a nice crunch to the pancake


Ingredients:


Refined Flour - 1 cup
Baking powder - 1/2 tsp
Milk - 1/4 cup
Spinach - one large bunch
Pepper - liberal
Salt to taste
Oil/butter for frying

Blanch the spinach  in hot water for a couple of minutes
Cool.  Chop fine along with the stems

Make a batter with the flour, baking powder, salt, pepper, milk
If you need to make thinner pancakes add more milk or even water

Heat a pan.
Add butter or oil
Pour out pancakes
Brown on both sides.







These savoury pancakes can be had with just about anything.  Enjoy.

    1. I thought so too :-) but the ingredients are different and the addition of spinach makes it seem as if there is coriander and thus the look.
