Besan Chila / Dosa

Many call it a Besan omelette.  A vegetarian omelette without eggs. But somehow, if it is vegetarian it is not an omelette and I'd rather call it by the original name of Chila or even a Dosa.  While I did make the Chila with besan alone, I found it not to my liking.  I am not fond of gram flour dumplings in kadi either.  I find it too heavy.  And so a slight variation - almost like a rava dosa, though not as crisp.


Ingredients: To make about 4 -5 nos

Gram Flour/Chickpea Flour/Besan - 2 tbsp
Suji/Semolina - Rava - 2 tbsp
Rice flour - 2 tbsp
Onion finely chopped - 1/2
Green chilies finely chopped - to taste
Tomato - finely chopped - 1/2
Turmeric - a dash
Salt to taste
Corriander leaves - finely chopped
Shah jeera or even cumin seeds - 1/2 tsp ( optional)
Ginger - 1/4" finely chopped.

Take the flours in a bowl.
Add the chopped ingredients - you can even add capsicum and mushrooms
And the powders/salt/jeera
Mix well.
Add enough water to make it slightly runny.

( You can make it a batter that you can spread with a spoon or like I did - drop it onto a hot pan from a height - and depending on that you will need to add water - more dilute for dropping it onto the pan)

Heat the pan - it should be hot enough to immediately set the batter
Smear a little oil on the pan
Take a spoonful of batter and pour onto the pan from a little height above in circular motion
Allow the underside to brown and flip over
And turn back till it gets crisp.
Remove from pan and serve.

I had it with a tangy tomato chutney.  This dosa/Chila has to be eaten hot.
