Recipe and pictures - Sa

Flapjacks in the US and Canada are thin pancakes.  But in the UK they are nice crunchy or chewy bars - make them as you would prefer - quite like our chikis.  I have always liked them chewy rather than totally crunchy.

Butter - 125g
Brown Sugar -  80g
Golden Syrup - 5 tbsps
Oats - 250 gms
Walnuts and sultanas - chop them up

Place the sugar, butter and syrup in a pan over heat.
The butter will melt. Mix the ingredients well.
Add the rest of the ingredients.
Mix again till they are all well coated.
Butter a baking tray.
Spread the mixture on in 2 cm - 3 cm thick.
Bake in pre-heated oven ( 180 degrees) for about 20-25 minutes or till top is brown and is slightly soft to touch.
It will get firm as it cools.
Place on cooling rack.
Cut to squares when still slightly warm.
Leave to cool completely before you remove them from the tray.
Store in an airtight tin.
