Blooming Brilliant Brownies.

Baked by Sa.   Recipe sourced from Jamie Oliver's website. 

Ingredients:
Unsalted butter - 250 g

Dark chocolate - 200g broken up
Cocoa powder - 80 g sifted
Plain flour - 65 g sifted
Baking powder - 1 tsp
Caster sugar - 360 g
Eggs - 4 large

Optional :
Sour cherries - dried - 75 g ( optional)

Nuts - chopped - 50 g ( optional)

Preheat your oven to 180°C/
Line a 25cm square baking tin with greaseproof paper.

The Brownie Mix
Melt butter and chocolate in a large bowl over some simmering water.
Mix until smooth.
Add the cherries and nuts. Stir.
Take another bowl.
Mix cocoa powder, flour, baking powder and sugar.
Now, add this to the chocolate, cherry and nut mixture.
Stir together well.
Beat the eggs and mix in until you have a silky consistency.



Pour your brownie mix into the baking tray
Place in the oven for around 25 minutes.
They should not be overcooked like you do cakes.
The skewer should not come out clean.
The brownies should be slightly springy on the outside but still gooey in the middle.
Allow to cool in the tray.
Carefully transfer to a large chopping board and cut into squares.

Jamie Oliver also suggests that they can be served as a dessert by placing a dollop of crème fraîche mixed with some orange zest. Yummy!  I would love to eat it with vanilla ice cream too!
