Kova Curry

Thendle (kovai,dondakaya,ivy gourd) - 200 gms
Tomatoes - 2 large
Roasted til ( gingelly powder) 2 tbsp
Ginger garlic paste - 1 tsp
Onions - 1 large
Cumin seeds (jeera) - 1 tsp
Turmeric - 1/4 tsp
Dhania (coriander) powder - 1 tbsp
Garam Masala powder - 1/2 tsp
Chili powder - to taste
Salt - to taste
Oil - 2 tbsp

Wash and cut the kova - preferably into medium sized pieces
Place in a microwave dish, and coat with 1 tbsp oil
Microwave for about 4 mins on high, pausing each minute to stir the veggie

Take a wok
Add the jeera, brown them
Add the onions, sauté well
Add chopped tomatoes and continue to sauté
Now the powdered masalas - garam masala, turmeric, dhania powder.
Also, the roasted gingelly seeds powder
And the microwaved veggie
Mix well
Add a little water to get a gravy consistency.
Add the chilie powder and salt.
Simmer
Remove and serve with hot rotis.
