I found different versions of making Pineapple Kesari online. I decided to do a little of each and the dish turned out quite nice. I made a small quantity just enough for the two of us.
Ingredients:
Bombay Rava ( Sooji, Semolina) - 1/2 cup
Sugar - 1/2 cup ( this could vary according to the sweetness of the pineapple)
Pineapple slices - 3 ( fresh) chopped into small pieces
Ghee - 50-75 gms
Cardamom powder - 1/4 tsp
Cashew - few
Raisins - few
Water - 1 1/2 cups approximately
Sauté the rava in a little ghee till it acquires a nice flavour. Keep aside
Take the chopped pineapple in a bowl, sprinkle a little sugar and microwave for about 2 mins
Take the wok, add remaining ghee, fry the cashew and raisins. Remove and keep aside.
In the same vessel, add the pineapple pieces and sauté for a minute or so.
Add the water, allow it to boil. Turn down the heat add the sugar and allow to simmer for some time.
Add the roasted rava gradually. Keep stirring all the while. Add the cardamom powder
Once the mass comes together and separates from the sides of the vessel.
Remove. Garnish with cashew and raisins.
Serve warm.
