Aloo Palak - Potato with Spinach



















Normally the Spinach is made into a puree but here the spinach is only chopped and cooked.

Ingredients

Spinach - 1 large bunch
Potato - 2 medium sized
Onion - 1 small
Garlic - 4 pods
Tamarind paste - 1/4 tsp ( optional)
Sambar powder - 2 tsp ( optional - or can be substituted with coriander powder)
Oil - 2 tsp
Cumin seeds- 1 tsp
Turmeric powder - 1/2 tsp
Red chili powder - to taste
Salt to taste


Chop the spinach.
Dice potato and onions
Heat oil, add cumin seeds and brown
Add garlic
Add the potatoes and saute.
Mix in the spinach, continue to saute
Add the sambar powder, chili powder, salt, turmeric, tamarind paste
Add a little water and cook till the potatoes are done.
Serve with rotis
