Paal Payasam

Milk - 1 litre
Rice - 1/2 glass - 75 gms raw rice. North Indians swear by basmati rice
Sugar - 100 gms ( approx)
Ghee - 1 tbsp
Cashewnuts
Raisins

Boil milk. To boiled milk add the raw rice
And continue boiling - care to be taken to ensure to stir and keep on low heat to avoid scorching of vessel which will impart a burnt flavour to milk.
Once rice is cooked, add sugar.
Keep on fire till required semi solid consistency is reached. ( Keep stirring)
Take off fire
Fry cashew in ghee and when it turns brown add the raisins.
Add to payasam.

( To hasten the payasam making part of milk may be substituted with condensed milk. In this case sugar amount to be reduced or Milk powder dissolved in a small quantity of water added to milk - which will mean less time to condense the milk to required consistency.)
