I saw the recipe of Brioche at Priya's Versatile Recipes . I had to make it. However, I have to admit that I did not stick to the recipe. I was running short of butter, and should have waited till I picked up a pack from the store. I used about 2/3 butter. As a result, the product though lovely is more a low fat brioche and not the extra soft buttery one. And secondly, though I halved the ingredients I prepared the same number as she did. And so each brioche was smaller and I did not get the same number of whorls. But nevertheless, I was pretty pleased with what I made.
( This is the original recipe - Makes 6 nos)
Bread Flour or All Purpose Flour - 3 cups
Dry yeast - 15 gms
Milk - 1/2 cup - luke warm
Egg yolk - 3
Sugar - 1/4 cup + 1 tsp for the yeast mixture
Salt - 1 tsp
Butter - 100 gms
Sugar pearls ( I did not have any)
Chocolate chips
For the egg wash
1 egg yolk + 1 tbsp water
To the warm milk add the yeast, a tsp of sugar and salt.
Keep for 10 minutes till it turns frothy
In a bowl, place the flour, egg yolks, and sugar.
Add the yeast mixture gradually and make a soft dough
If required add a little more warm milk or water if the dough does not come together
Add in the butter.
Knead for 10 minutes
Keep bowl covered with a napkin or cling wrap for 2 hours till the dough doubles in size.
Knead the dough and divide into 6 nos
Take a single portion and roll into an oval shape - maybe slightly thicker than a roti
Without cutting through the edges make slits along the dough lenghtwise
Sprinkle the chocolate chips - the more generous you are - a better tasting product you will get !
Roll it lengthwise
You will then have to wind it around ( almost like how you make a lachha paratha) into a round brioche
(Now here I forgot to take the step by step pictures. Took the first two and forgot the rest ... so hop over to Priya's site if you are not able to follow)
Do this to all 6 batches.
Place on a greased sheet in a baking tray.
Allow to sit in a warm place for half hour
Preheat oven to 180 C
Brush the brioche lightly with an egg wash ( egg wash - beat the egg yolk with a tbsp of water )
Sprinkle the sugar pearls
And bake for 20-25 minutes till you get a golden brown crust.
Cool and enjoy !

ReplyDeleteI had mixed reaction at home. Though they all liked it, they were unanimous that the extra butter may have resulted in a more brioche like product that is purchased from the bakery.
