This is a recipe from Monsoon Spice. This is a veggie that you are tempted to cut and fry, it is a favourite anyway. But I wanted to try something different today.
Ingredients - for the main curry, seasoning and spice powder
Main
Okra - Bhendi - 250 gms
Onion - 1 large - sliced
Garlic - 2 pods - chopped
Turmeric - 1/4 tsp
Roasted Peanuts - 1/4 cup
Roasted Sesame seeds - 1 tsp
Oil - to fry the okra ( 2-3 tbsp)
Salt to taste
Lime juice - 1 tsp
Seasoning
Oil - 1 tbsp
Cumin - 1/2 tsp
Curry leaves - few
Asafoetida (hing) - big pinch
Spice Powder
Cumin ( jeera) - 1/2 tsp
Chana (Bengal gram) dal - 1/2 tsp
Urad (Black gran) dal - 1/4 tsp
Peanuts - 2 tbsp
Sesame - Thil - 1 tsp
Red chilies - 3-4
Wash and dry the okra. Cut to 1/2" pieces.
Heat oil. And saute the okra and keep aside
Make the spice powder. Dry roast the ingredients. Make sure you add the urad dal and sesame seeds the last. Grind to fine powder and keep
Heat oil.
Add cumin. Let it brown a little. Add the sliced onion, brown a while
Add chopped garlic and then the curry leaves.
Then the turmeric and spice powder.
Let the ingredients coat the onions.
Now add the fried bhendi and salt.
Keep awhile till the veggies and the onion-masala powder blends well
Add roasted peanuts and sesame seeds
Squeeze some lime just before serving.
