Couscous Savoury Muffins

This recipe by Tickling Palates* had me put aside a choco rich baking dish that had caught my fancy for another day.  This one was a couscous muffin.  The pictures pf the muffins were really good.  And I thought a healthy dish was a better alternative to the chocolate cake.  These muffins should be had warm with a spicy ketchup.  I can only say - it's different and worth a try. Guaranteed not to add any inches around the waist.

Ingredients - makes 6
Couscous - 4 tbsp (60 gms)
Water - equal quantity

Refined flour (Maida) - 50 gms ( a little more than 3 tbsp)
Baking powder - 1/2 tsp
Red chilie powder - 3/4 tsp
Pepper powder - 1/2 tsp
Grated cheese - 50 gms ( if you like it cheesy, add some more)
Olive oil - 3 tbsp ( or any other refined oil)
Onion - 1/2 cut into strips and caramalise them on a pan for use
Egg - 1
Milk - 1/4 cup
Salt to taste
Coriander - chopped - few

Preparation of couscous
Pour water in a vessel.  Bring to boil. Switch off heat.  Add couscous.  Keep covered for 10 minutes.  When lid is removed you will find the couscous would have absorbed the water.  Fluff it with a form.  Keep aside.

Take the dry ingredients in a bowl.  Flour, salt, chilie powder, pepper powder, chopped coriander, grated cheese, baking powder.  Mix well.  Now add the couscous. Check for salt.

Take a small bowl.  Pour the milk, oil, and crack an egg into it.  Whisk lightly.

(Pre-heat the oven to 200C)

Add the egg mixture to the dry flour mixture in the bowl.  Mix gently.

The mixture will not be runny, but quite lumpy.

Spoon into greased muffin cups.  Drizzle the top with olive oil.

Place in oven for about 25 minutes till the muffins are golden brown.  Check to see if they are done with a skewer that should come clean when put in the center.

Enjoy warm with a sauce of your choice.

The spices should be as per your taste.  The muffins do rise a bit, but one or two did not as much as the others.  That is to be expected.  Ensure that the muffins are nicely browned and cooked inside.
You may alter the spices according to taste.  I would think more cheese would be nice.
