Bruschetta with fresh mozarella, tomatoes and basil

This is a great appetiser.  Especially on a warm summer day.  And if you are a bread lover, you could make a meal of it.   C made this for me once again since she saw how I raved about it.



Ingredients:

Baguette/ French loaf
Fresh mozzarella
Fresh basil
Tomatoes
Olive oil
Salt
Pepper

Cut slices of the baguette
Toast in the oven for about 5 to 10 minutes
Meanwhile cut the tomatoes into thin roundels
And the mozzarella

Take the toasted slice.
Place the tomato slice, the mozzarella cheese, and basil
And so with all the slices.
Arrange on the serving platter
Sprinkle a liberal amount of olive oil on the slices.
Grind pepper.  Salt to taste

Serve

Variations - many - some use sundried tomatoes, some grill tomatoes before serving on the toasted baguette slices.  Garlic can be rubbed on the slices for added flavour.  The mozzarella may be grated instead of slices

You cannot go wrong.
