Bread and Butter Pudding

This is a partly microwaved version that tastes better than it looks.

This dish was not planned. I had seen this lovely panna cotta and wanted to make it.  But for some reason the dish made with agar agar did not set.  So I was left with this slightly sweet creamy mixture that I thought I could put to better use.  And so the idea of the bread-butter pudding.

I read that the bread butter pudding was possibly a way to use stale bread. And many swear that the dish with fresh bread does not taste as good.   This one here is a basic dish and you could use nuts, chocolate, lemon zest, a marmalade glaze..the options are endless. 


Ingredients:
Bread Slices - 4 nos - ( I used brown bread here)
Egg - 1
Milk - 1 cup
Sugar - 1/4 cup
Cream - 1 cup ( you could use much less)
Vanilla essence - 1/4 tsp
Butter - 25-50 gms - I used salted

I toasted the bread since this was being made in the microwave - skip this if you are baking the pudding.

Butter the bread.
Cut into triangles or cubes
Place with the crust side up in a microwave safe dish
Beat the egg, milk, cream and sugar lightly
Pour the beaten mixture over the bread and keep awhile till the liquid is absorbed by the bread.
Microwave for 4-5 minutes till done
(Better still bake at 180 C for 15-20 minutes)


You can eat this warm.  I liked it better when it was cold.  And if you like french toast you would like this for sure.

  1. Its like a sweet french toast...Yummy!

    I make it in similar fashion. Just that I don't add sugar to the egg mixture..I dust castor sugar over the bread after it is done. :)

    1. Yes like french toast but differently made. Had I arranged it better in the dish, I would have posted the picture of the dish in total :-)

  3. Radha, so you used the mixture with the agar agar in it. Do you think this made any difference in the final taste? This would be similar to Double Ka Meeta made in the Deccan region. I liked the idea of toasting the bread...and maybe ghee will also bring in traditional flavours.

    1. Only one and half teaspoon of agar agar and I did not find any plain agar agar in the supermarket. This was the ready to eat china grass packs and I think that is probably the reason it did not set. The recipe called for a tsp of AA. It hardly added to the taste. I guess this is like a traditional milk custard mixture that is poured over the bread and baked. And no it cannot be compared to the double-ka-meeta - that is so much richer - fried bread steeped in sugar syrup with khova.

  8. thats an easy recipe. even i have made panna cotta with agar agar but they just don't set well. still all relished at home.
