I saw this on a Sanjeev Kapoor show this morning. The recipe was simple and since it did not seem too much effort , especially since I wanted to satisfy that sweet tooth of mine, I made it.
Ingredients: ( this will make about 4 pancakes)
Maida (Refined flour) - 1/2 cup
Baking powder - 1/4 tsp
Salt - 1/4 tsp
Sugar - 1/4 tsp
Milk - to make it a dropping consistency - approx 1/4 cup
Filling:
Nuts - use cashew, walnut or whatever - powder
Powdered Sugar - 4 tbsp ( I used brown sugar)
Mix the ingredients for the pancake.
Add enough milk to bring to the right consistency.
Lightly grease a non stick pan.
Drop a ladle of the batter
Twirl around the pan till it spreads.
Keep on low fire till one side is done and the edges seem to loosen at the sides.
Remove and keep on a plate.
Place filling in centre of the pancake ( lengthwise)
Fold.
Place on pan again till it is lighly browned.
Another option is to steam it.
Serve when warm with honey.
Variations:
Filling : Can be just about anything. You may reduce or omit the sugar in the batter. And fill it with mince meat, soya granules, a salad or whatever.
This looks so soft and yumm, had seen the show.
