Batata Poha

The younger one has finally moved into an apartment . She wanted to know how this particular dish was made on her last visit home. I did not have time to make it then and so the step by step pictures for her to try it out. This is a Maharastrian dish made in my way ( which I hope is close to the original)

Ingredients:
Poha ( Beaten rice flakes)- 1 cup
Green chillies - 4 ( as per taste)
Onions - 1 large
Coconut - 3 tbsp - grated (optional)
Potato - 1 small
Cumin seeds - 1 tsp
Mustard - 1/4 tsp
Curry leaves - few
Coriander leaves - garnish
Asafoetida (hing) - pinch
Lime - small ( use only part)
Oil for seasoning.

There are two types of poha. For this use the thick one.
Wash poha well. Some moisture will be retained even after draining the poha.
Keep covered for a while for it to get slightly softened. Add required amount of salt to the poha.  Some even add a bit of sugar.

Chop onions and slit green chillies. Also grate the coconut and keep a slice of lime ( for the end)

Chop the potato into small cubes.
Heat oil.
Add mustard, allow to splutter and add the cumin, hing, curry leaves, onions, green chillies. Saute
Add the potato cubes.
If you wish it to be spicier add a bit of chili powder (optional)
Add about half a cup of water and allow the potato to cook.

Add the washed poha and salt.
Mix well.
Add the grated coconut.
Remove from fire.
Garnish with finely chopped coriander leaves ( missing from this picture - ran out of it)
And squeeze a dash of lime and serve hot with ginger pickle.
