Yellow Pumpkin Vatral Kuzhambu


Ingredients:

Vatral Kuzhambu powder - preferably from Grand Sweets
( you can substitute with Sambar powder - we used to only till we discovered the Grand Sweets product)
Yellow Pumpkin - 1 large slice of pumpkin
Tamarind paste - 2 tbsps
Red chillies - 2
Curry leaves
Channa dhal - 1 tsp
Mustard - 1 tsp
Vatral ( dried vegetables)

Take a little oil.
If Vatral is available fry them and keep aside.

For the seasoning -
Add the channa dhal, red chillies, mustard.
When mustard splutters add the curry leaves and the vegetable
Saute, add water to cook vegetable.
Add turmeric powder.
The Vatral Kuzhambu powder.
When the vegetables are semi cooked, add the tamarind and the fried vatral
Simmer till the vegetables are cooked and a slightly thick consistency is achieved.
Add salt to taste.
If the Kuzhambu is too dilute, dissolve a little rice flour in water and add to the Kuzhambu and continue to simmer till the consistency is achieved.

Can be had with rice, upma and hot pongal . Forgot to mention this was made by fa. Cannot take the credit for something I did not make!
