A got these large or should I say huge sweet potatoes. And ever since I have been on the lookout for a nice recipe. I finally got one from the magazine ' Jamie' - a Jamie Oliver recipe. I am not really a big fan of his. So I started out with a lot of hesitation... and presto! - it turned out quite nice. I mean, who would have thought a combination of spinach, channa and sweet potato would work? I have modified it a wee bit.
I must admit it is easy when you have a can of chopped tomatoes, a can of cooked chickpea and a bag of spinach that has been washed and packed, and of course coconut milk that comes out of a carton or by reconstituting coconut milk powder. This dish, with the above conditions, can be made with no prior planning
Ingredients:
Onions - 2 medium - sliced
Chili powder - to taste
Ginger- garlic paste - 1 tsp
Sweet potato - 1 ( actually used half since what I had was HUGE! ) - peel and cut into small cubes. Keep in water
Chole Masala - 2 tsp ( use any masala - butter chicken, rajmah masala ... ) *
Garam masala - 1/2 tsp
Dhania / Coriander powder - 1/2 tsp
Tomato pulp - of about 4 large tomatoes ( I used a can of chopped tomato that I blended)
Coconut milk - 1 cup ( used Maggi Coconut milk powder)
Spinach - 1 large bunch
Chickpea - 200 gms ( used a can of cooked chickpeas - drain well )
Coriander for garnish
Oil - 2 tbsp
Salt to taste
(* Recipe called for what is called Rogan Josh paste )
Take a pan
Heat oil. Add the sliced onion, keep till just turning brown
Then the ginger-garlic paste
And the sweet potato cubes. Fry a while
Add the tomato pulp and a cup and half of water. Bring to boil.
Simmer with a lid till the sweet potatoes are getting tender and the tomato pulp is beginning to thicken.
Now the masala powders one by one.
Simmer till it thickens a bit.
Next the cooked chickpeas. Continue to simmer.
Remove the lid
Stir in the coconut milk
And the spinach. Keep till the spinach is beginning to wilt.
Garnish with coriander leaves.
Serve on a bed of hot rice. You could eat it with any type of roti too.

Chick pea is regular at my household. I shall try to get hold of sweet potatoes and try this curry out. looks like a nice combination.
